GDPR cinformity without all this Google-stuff possible?

Hello,
we need a possibility for our website guests to write a review and give a 5-star-vote. This should be noderated, as well. We will not be allowed to integrate any Google functionality, due to privacy reasons.

Will there be a possibility just to "switch off" the Google-Stuff?
Is there a way to moderate the votings before setting them public?

This would be great.
